I was able to get some green peppers from the half price rack a couple of weeks ago and there was nothing wrong with them. I was excited to save some money and I did not have to cut any parts away that had gone bad. Now, what to do with 8 green peppers....dehydrate them!

Cut them up and remove pith and seeds. Slice into wedges. After I did this with the eight peppers I ended up with 4.125 lbs of peppers which means each pepper was around 1/2 a pound.
Slice wedges into chunks and place in food processor.
Pulse a few times or how ever long it takes to get pieces that are not too small.
Spread out on dehydrator trays.
Dehydrate in the setting that is for fruits and vegetables, which is around 130 degrees. It took approximately 6 hours for everything to dry.
So my 4.125 lbs of peppers now weighs 4oz. One cup of fresh peppers dries down to 1/4 cup.
What to do with dehydrated peppers.... Add to soup, stew, chilli, etc. I was also inspired to dehydrate peppers in the first place by a post where dried peppers are rehydrated and added to home made salsa.
