Chocolate Chip Cookies and a Whole Lot of Dough

I'm in major cookie production right now so that I can finish up my goodie bags that I am making for Christmas gifts.  I was not feeling to good about things the end of last week.  The list of things to do seemed so long and I was wondering how I was going to get it all done.  Then I decided to eliminate some thing from my list -- just not do them, such as Christmas cards, extra baking, etc.  I felt better about that.  Then Saturday I was able to go out shopping and just had little Chloe with me.  I didn't have to worry about the other kids as they were home with hubby.  I was able to get ALL my shopping done!  I even got most of the gifts wrapped over the weekend.  PHEW, much less anxiety now!  Since I was feeling much less overwhelmed, I did get a bunch of Christmas cards done to hand out at church and now the cookie baking is on again too.

I mixed up three batches of cookie dough which are now chilling in the fridge.  Then hubby said, "Can you make chocolate chip too?"  So I fired up the mixer one more time.



Here is my recipe for the chocolate chip cookies:
2 1/4 cups flour
1 tsp baking soda
3/4 tsp salt
1 cup butter or margarine, softened
3/4 cup granulated sugar
3/4 cup packed brown sugar
1 tsp vanilla
2 eggs
1 cup chocolate chips

Preheat the oven to 375 degrees.  Combine flour, baking soda, and salt.  In a large mixing bowl combine butter, sugars and vanilla.  Beat at medium speed until light and fluffy.  Beat in eggs.  Add flour mixture.  Beat on low until soft dough forms.  Add the chocolate chips and mix well.

Drop by heaping teaspoon about 2 inches apart onto ungreased cookie sheets.  Bake 9 to 11 minutes or until the edges are golden brown.

When I make chocolate chip cookies, I usually put some cookie dough balls into the freezer.  I freeze them on a cookie sheet and then transfer them to a ziplock bag.  Hubby LOVES fresh baked cookies HOT out of the oven.  This way when he gets a craving he can pull half a dozen from the freezer and bake them up in the toaster oven for a quick treat.


This is all the cookie dough I  mixed up today.  Hopefully I will be able to get everything baked tomorrow!
