Pumpkin Chocolate Chip Muffins


This is another recipe that I found at Money Saving Mom and Oh my, are they delicious!  They have certainly thrown me off my diet that last couple of days!  Here's the recipe from Crystal's site with my changes added in.

Pumpkin Chocolate Chip Muffins

  • 4 eggs
  • 2 cups sugar (I used 1 1/2 cups and they still tasted nice and sweet)
  • 1 (16 oz.) can pureed pumpkin (I used frozen pumpkin puree that I had made, thawed it and drained it really well)
  • 1 1/2 cups oil (I used 1/2 oil and 1/2 applesauce)
  • 3 cups flour
  • 2 teaspoons baking soda
  • 2 teaspoons baking powder
  • 1 teaspoon ground cinnamon
  • 1 teaspoon salt
  • 1 package chocolate chips
In a large mixing bowl, beat eggs, sugar, pumpkin, and oil until smooth. Add in dry ingredients and mix well. Fold in chocolate chips. Fill greased or paper-lined muffin cups 3/4 full. Bake 16-20 minutes at 400 degrees.
Makes 24 muffins.

  1. white or brown sugar?? what size of bag of chocolate chips?

    they look very yummy can't wait to make them!

  2. I used white sugar and I think I dumped in about 1 1/2 cups of chocolate chips.
